Happy Easter




Hello and welcome to another week. Easter will be here soon so I have found myself making some chocolate eats. On this occasion I had made a simple chocolate cake for a cake stall but it rose so high it split in many places and so we enjoyed some while it was warm and used the rest in desserts. I just broke up some cake and added a little yoghurt, cream, dark choc chips and fresh raspberries...mix gently and enjoy!






I have also been trying some flour-less microwave chocolate puddings and slowly getting it down-pat. It all depends on the dish you cook it in to get the best results.





This was a little better. I think we topped it with raspberries and choc chips along with that huge dollop of whipped cream...yum!




For a very quick bite, just make up a chocolate brownie and leave it in the fridge. When you feel like a piece, warm it in the microwave and top with cream and fresh fruit. It hits the spot!





With the weather turning a little cooler and we have been given lots of heavy rain and wind, folk are dressing warmer. My hands have been busy keeping the beanies in stock.

Green


I am not a wearer of green but I certainly love to surround myself with this living colour.

Over the weekend I planted out a punnet of basil seedlings in amongst the other plants with the thought that they might get a little warmth from their neighbors and give me some pesto in the future. Here's hoping!!



Recently I cleaned up 'my space' and transferred all the cotton yarn to one side of the room and brought forward all the warmer yarn for the colder weather. I found some I had forgotten about, who doesn't, and was newly inspired on new projects. I found a bag of yarn that I had made into dishcloths a few years back and so I got to work and made a few to replace old ones and there is still another ball or two left for next time. Sunday afternoon was spent finishing them off while watching a bit of television and 'hanging out'
.



We will have to have this again soon. I fried up some flaked almonds in a little fat (can use oil or butter) and stored them to use as required. For a few days we enjoyed our lettuce topped with mayo and nuts. It adds a delicious crunch and is very nice. At this meal we accompanied it with Baked Camembert. 


I was amazed to find new growth on the rose bush and it is giving us a second round of beautiful roses to enjoy this season.


I frightened them. Some took to flight and some decided to paddle away as fast as they could.

Long Weekend



Good morning. We have just came out of a long weekend and I am off to a late start. Everything is back to front today but with a bit of re-arranging the day will happen.




A huge blessing this week!! A friend gave me some lemons from her garden and let me know I can pop around anytime when I run out. Whoohoo! They taste great!!




Yesterday I managed some letter-writing and these will be posted today.




Yesterday I also made a new batch of toasted Granola. This have proved very successful as it lasts over a week and is quick and tasty to prepare for hubby each morning. I just top with yoghurt and whatever berries are hanging around in the fridge. Easy as!




And look, I found a Keto Bun recipe that we like and works well filled with fried egg and salad, sauce or mayo, whatever, just load it up. Yum.

AUTUMN



Good morning. Welcome to a new week and a new season. We just love Autumn. The mornings are cool, crisp and quiet as the wind drops. The days warm up beautifully and that makes it special. 

The leaves are starting to fall from the trees and it won't be long before there will be pretty carpets laid of them everywhere.




The walks by the foreshore have been tranquil. I just love it. You never know what you are going to find down there as it is never the same, even though I am mostly there the same time each day. 




We have been devouring some hot meals. I cooked some lamb shanks the other day and at this particular meal had tried a new recipe. All you need to do is line your baking dish with bacon up over the sides, fill it with raw mince, seasonings and sliced capsicum. Fold in the bacon and top with grated cheese. Bake for about 30 mins and enjoy. It is equally enjoyed with a salad or mash.



On my needles I have a new yarn. It is a blue-red colour and I am enjoying working with it.
